Whole30- Day 2

Whole30 Day 2!  

Breakfast was "monkey salad". I sliced a banana, tossed in some shredded unsweetened coconut flakes, and a handful of cashews I crushed up. Yum!!! 


I've literally seen seven people run by my window today, and am so happy by the healthy changes our neighbors are making! (Now maybe I should get out there and jog around. Nora will be six weeks in two days, and I officially have the okay to exercise again. We shall see...) for now I'll stay inside and drink my coffee with coconut cream. The almond milk wasn't "creamy" enough, so I opened a can of the Trader Joe's coconut cream. This stuff is amazing and I think it's only around $1.50. I always keep it in my pantry for baking, it's absolutely the best for coconut whipped cream! 


Lunch was last night's chicken and roasted pepper

chili with some nutritional yeast on top. 


Dinner was slow cooker creamy cashew chicken. I tossed chicken and potatoes in the slow cooker and made a quick sauce in the vitamix from garlic, ginger, and red curry paste (among other things). Six hours later my house smelled amazing and dinner was done! I just served this over cauliflower rice with some scallions.

I had some snacks today of roasted almonds, some raw cashews, and an apple.
